For the longest time I struggled with breakfast before work. I needed something quick, that kept me full, didn’t cause a blood sugar spike / crash, and I wanted it to taste good. Oh yeah, and sometimes I needed to be able to have it in the car when I woke up late.
As I began cleaning up my diet more and more, I also decided I wanted it to include vegetables. I was repeatedly coming across research that stressed the importance of incorporating more green vegetables into your diet, ideally starting with breakfast. I definitely wasn't doing that with my oatmeal and whole grain cereals, so I decided to try out green smoothies. Shortly after - I was hooked. They checked all the boxes and there are unlimited ways to make them - although I always resort back to my basic green.
Now that I have an established method of eating and a template that works for me, I have adjusted them to fit that. I make sure they all include healthy fats, protein, fiber and veggies and I am good to go! Here are a few of my favorite paleo friendly smoothie recipes. Try them out and let me know what you think!
Tip: If you find yourself hungry a few hours after having one, add an additional serving of protein or fat, or have your smoothie with an egg or two. I often have mine with crispy sauteed kale, topped with hemp seeds and nutritional yeast for an extra boost.
Strawberry Pina Colada Green Smoothie (Recipe Below)
Strawberry Pina Colada
1 c. Coconut milk
½ c. chopped strawberries
1/2 frozen banana
1-2 c. spinach
1 T. chia seeds
2 scoops collagen protein (or protein of choice)
