Marinated Veggie Salad

The pasta-free salad that you will actually want to eat!

This salad recipe includes all the flavors of a pasta salad without the carbs that come with it! This nutrient rich salad is the perfect paleo or whole30 friendly potluck or picnic dish! It came about because I love these veggies separately, cooked or not. I have recently started getting into pickling and marinating different veggies and tomatoes and decided to through them all together with a little homemade marinade......and this was the result. It's perfect side dish but also can be made into a meal with some healthy fats and protein. Best of all - it is SO easy!

Whole30 and paleo friendly Marinated veggie salad

Recipe Ingredients

  • Chopped Veggies - I used zucchini, yellow squash, mini cucumbers, cherry tomatoes, red onions (You can modify and use any veggies you like / have on hand)

  • Kalamata Olives

  • Sun-dried tomatoes

  • 1/2 c. apple cider vinegar

  • 1T. Nutritional yeast

  • Himalayan sea salt, pepper, onion powder, parsley and garlic to taste

  • A few dashes of coconut aminos

Recipe:

  1. Chop up veggies

  2. Mix up all other ingredients with blender or whisk (taste and adjust seasonings as needed)

  3. Pour marinade over veggies and mix well, piercing veggies to ensure marinade soaks through

  4. Put in fridge overnight

  5. Enjoy cold (or grilled) on its own, or with grilled chicken **(If you eat dairy, this would be great with some feta or goat cheese)
