Perfect Weeknight Shakshouka

Those nights when you get home late, and realize its past dinner time and you are starving..are the absolute worst. You have two options - either order (and wait for) takeout, or make something super quick with what you have in the fridge and pantry. It gets even harder if you want it to be healthy and involve minimal clean up.



I used to always go for the takeout. Then I started to realize, by the time I decided what I wanted, ordered and waited for it, I could have had dinner cooked and cleaned up. I would feel better, it would be cheaper and healthier.


So I started making super easy one-pan recipes like this one. This perfect weeknight shakshouka is awesome because it is made from spices and vegetables that most of us already have on hand, its full of veggies, flavor, paleo and whole30 friendly. Its perfectly balanced with a mix of veggies, protein and healthy fats.


Plus, it was surprisingly delicious!


I got the original idea from a post on instagram by Powered by Beets, and remembered it when I ended up in the above describe situation one night.

Perfect Weeknight Shakshouka

Recipe Ingredients:

  • 1/2 c. mushrooms

  • 2 T. EVOO

  • 1 c. tomato sauce (go for one with minimal ingredients or make your own - its soon easy and you can freeze for future use) If going with store bought, I love Rao's homemade.

  • 1 c. Spinach

  • 1 red bell pepper, chopped

  • Garlic, onion powder, sea salt, chili powder and pepper to taste

  • 2 eggs

  • Cauliflower rice (or any other veggies)

  • Nutritional yeast and parsley - for sprinkling at end (optional)


Recipe Instructions:

  1. Sautee garlic, onions, peppers and mushrooms in extra virgin olive oil until softened.

  2. Add spinach and continue to stir and cook until wilted.

  3. Add tomato sauce and simmer for 3-5 minutes.

  4. Make two holes for the eggs and turn heat to medium.

  5. Crack and pour eggs into the holes, and cook through.

  6. Serve over cauliflower rice, veggies or preferred side dish.

  7. Top with nutritional yeast and/or parsley

  8. Enjoy!
