Yummy yellow squash crisps

Who else needs a new way to get in more veggies on a regular basis? I know I can't be the only one! My sister once told me she was eating a plain, microwaved squash and I almost died. There are SO many ways to add flavor and deliciousness to veggies (especially squash) that there is never a need to ruin them like that. Plus, I can't think of another way to ruin the ideas of vegetables more than eating them plain and microwaved. Yuck.




My favorite way to cook any vegetable (especially squash) is hands down to roast it. Second, would be grilling, and third would be a recipe with some type of yummy sauce.


Making veggie chips works for most veggies, although the ones with high water content are a little trickier than those without (kale, etc.)


Squash fall in that category, so you just have to make sure to slice them thin, and watch their temp. If you do that, you should be just fine!


This paleo recipe is perfect to eat as a side dish, on a salad, or really with anything! They are absolutely whole30, paleo and kept friendly, so if you are following any of those plans, add this recipe in! Veggies chips are a great way to get more plants in your diet.

Recipe Ingredients


Recipe Instructions
  1. Preheat oven to 450.

  2. Slice Yellow Squash very thin, using a mandolin, knife, or slicer on cheese grater.

  3. Mix with all ingredients to evenly coat.

  4. Spread on parchment paper covered baking sheet, making sure not to crowd.

  5. Put baking sheet on second to bottom rack in oven

  6. Cook for 10-15 Minutes. Flip, turn baking sheet if needed, and cook for 10-15 more watching closely for burning.
