Zucchini Chips

Veggie chips anyone?! I literally couldn’t stop eating these, and I wasn't mad about it. When I can find a creative way to eat my vegetables..I am all about it! This one is great because its super easy and yields great results, almost every time. I did accidentally turn the oven timer off one time while making sweet potato chips and they DID NOT turn out - so I don't suggest doing that :) 🥒Awhile ago I attempted salt and vinegar cucumber chips, used like 150000 cucumbers, sliced them super thin, followed the instructions to a T, snnnd...They sucked. They shriveled up to nothing and it was a complete waste of time.

These veggie chips, however, never disappoint. They are so good, the definition of a "healthy snack" (or side dish) and you can use any veggies you want. Here I used zucchini and eggplant, but mix it up based on your preference!

Recipe Ingredients:

  • Vegetable of Choice (I used zucchini and eggplant)

  • Avocado Oil (I used chosen foods spray oil)

  • Favorite seasonings - I used simple salt and pepper

Recipe:

  1. Preheat oven to 425

  2. Slice veggies super thin (try to keep them all as close to the same thickness as possible so they cook evenly)

  3. Peel if you want, but not necessary for most veggies

  4. Lay on a parchment covered cookie sheet in single layer

  5. Spray with @chosenfoods avocado oil, and favorite seasonings. ( I usually keep it simple with s+p, but have also tried taco seasoning, @traderjoes everything bagel seasoning, etc.

  6. Flip and repeat

  7. Cook until browned, flip and repeat

  8. Continue until veggies reach desired crispness
